- 450g mixed berries
- 4 egg whites
- 1 cup caster sugar
- 1 tsp vanilla essence
- 2 tsp vinegar
- 1 tsp cornflour
- 1 cup double cream, whipped

- Preheat oven to 150ºC for 10 mins. Draw an 8inch circle on an oiled greaseproof paper and place on a baking sheet.
- Whisk the egg white stiffly; add half of the sugar and whisk till stiff again; fold in the remaining sugar. Add essence, vinegar and cornflour. Spread mix over the circle and form a case.
- Bake in the centre of the oven for an hour or till firm; leave to cool. Top with whipped cream and berries, dust with icing sugar, and serve.
