Berry Pavlova

  • 450g mixed berries
  • 4 egg whites
  • 1 cup caster sugar
  • 1 tsp vanilla essence
  • 2 tsp vinegar
  • 1 tsp cornflour
  • 1 cup double cream, whipped

  1. Preheat oven to 150ºC for 10 mins. Draw an 8inch circle on an oiled greaseproof paper and place on a baking sheet.
  2. Whisk the egg white stiffly; add half of the sugar and whisk till stiff again; fold in the remaining sugar. Add essence, vinegar and cornflour. Spread mix over the circle and form a case.
  3. Bake in the centre of the oven for an hour or till firm; leave to cool. Top with whipped cream and berries, dust with icing sugar, and serve.
